Easy Hashbrown Casserole -Crockpot Recipe

2 cups sour cream
1 cup sharp cheddar cheese
1 cup extra sharp cheddar cheese
1- 10.5 oz can of condensed cream of chicken soup, undiluted
1 cup chopped onion
1/4 tsp of salt
1/4 tsp of pepper
1- 32 oz. package of shredded frozen hash brown potatoes, thawed
Instructions
Step 1: Grill onions on the stove in butter or olive oil until softened and golden brown
Step 2: In a large bowl, combine sour cream, cheese, cream of chicken soup, grilled onions, salt and black pepper. Stir in hashbrowns until evenly coated.
Step 3: Coat inside of crockpot or slow cooker with cooking spray or butter. Add hashbrown mixture. Cover. Cook on Low for 4 hours. Enjoy!
Note: You can also choose to add garlic powder, preferred cooked breakfast meat, etc., for additional deliciousness!
Notes
I love to fix this for my family especially during the holidays as it can cook in the background and be ready without much thought! You can easily pair with eggs, muffins and danishes, etc. On Christmas morning, I often serve this dish alongside an egg and cheese casserole (you must get this recipe from my sister-Monique!), sausage or ham biscuits, muffins/danishes, grapes and juice. A table full of goodies that will fill everyone without a ton of effort.
Easy Big Family Taco Bar!

2 lbs Cooked Groundbeef with mild taco seasoning
2 Pre-cooked Rotisserie Chickens from grocer. Cut up in strips. Re-warm in oven on 400 degrees for 10 mins. with McCormicks Roasted Garlic and Herb or similar pairing of seasonings
5 Medium-sized Steaks (cut into strips)- seasoned with McCormick's Roasted Garlic and Herb or similar pairing of seasonings, salt and pepper, grilled in butter or olive oil
Large pot of Uncle Ben's Whole-grain Brown Rice
4 Onions -sliced and grilled in butter or olive oil
4 Bell Peppers (green, yellow, red) sliced and grilled in butter or olive oil
Cooked Frozen or canned corn
Cooked Can of Black Beans
Fresh Salsa
Fresh Guacamole
Tortilla wraps
Tortilla chips
Garden Salad- romaine lettuce, cucumbers, cherry tomatoes, southwest tortilla chips. Italian and Ranch Dressing
Bowl of Fresh Fruit- grapes, strawberries, watermelon
Lemonade and your fave beverages---we love lemonade!
Instructions
This isn't a recipe but more a listing of how to prepare a family taco bar spread. Set each of the items listed in the ingredients section out in raised chafing dishes and bowls for easy access. Enjoy!

Okay family--so this post is less of a recipe but more of an idea of what can be served for a large family event and goes a long way without much effort. I've served this for summer gatherings and football nights. Let's have some fun (while eating of course)!
