3 ripe bananas
1 cube of butter
1 cup Sugar
2 cups Flour
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon Salt
1 teaspoon Vanilla
2 eggs
1. Mash bananas with mixer - set aside
2. Cream Sugar and Butter to a creamy paste with mixer
3. Add bananas to creamy paste and mix thoroughly.
4. Add first cup of flour and mix throughly.
5 Add baking soda, baking powder, and salt. Mix thoroughly
6. Add second cup of flour and mix throughly.
7. Add eggs and mix throughly.
8. Add vanilla and mix throughly.
9. Cut a piece of white paper to the size of the bottom of the pan, and line the pan bottom with the paper.
10. Grease and flour a bread pan, preferable metal, not glass. Or spray with Baker's Joy.
11. Pour the batter into the pan.
12. Cook in 350 degree oven for 1 hour. Test for doneness with a toothpick probe at about 55 mins. Continue cooking until the toothpick comes out of the bread clean, with no batter.
13. Cool on a baking rack. Wrap in plastic wrap and/or tin foil when FULLY cooled.
Frozen bananas work wonderfully. Bananas frozen for at least 3 months, then thawed to room temperature, will ooze a banana oil when peeled that add additonal flavor to the bread. Fully ripe banana (not frozen) will still yield and excellent banana bread.
Add 1/4 cup of chopped walnuts if you prefer Banana Nut bread.
